Healthy Eating

I have been working hard to try and eat healthier during my whole weight loss journey. I am working to cut back on red meats and add more veggies. I'm pushing away from the fast food and making my own meals. It's difficult to bring a lunch because in my line of work, unfortunately there is no set lunch time. So, I try to counteract that with bringing healthy snacks, like my own dehydrated fruits and veggies. I find dehydrated fruits and veggies to work best for me since I tend to forget things. Dehydrated fruits and veggies won't go bad as quickly.

One thing I have been doing as well is making casseroles or large dinner dishes and making them last most of the week. This week I am on nom nom-ing on broccoli and three cheese lasagna. Of course, this much cheese is probably not best but it tastes so good! And since I participate in meatless-monday, a movement of people giving up meat one day a week to improve their health, this dish fits the requirements!

Plus it looks and tastes so damn good. I paired it with yellow carrots, navy beans, and spinach. Yum!
